"The age-old tradition of having fruit cake for your wedding cake is something that crops up in conversation at every consultation I hold with my wedding clients. The trend for wedding cake flavours has very much moved away from the traditional fruit and sponge cakes and couples are now opting for several different flavours in their tiered wedding cakes. My most popular flavours over the last year have been my lemon or orange drizzle cakes, each cake packed with fresh lemons or oranges and each layer of cake topped with freshly squeezed lemon or orange juice drizzle and filled with a dreamy vanilla buttercream. "At Just Because Cakes we offer a variety of flavours but our two most chosen flavours are caramel cake with salted caramel buttercream, a firm favourite with grooms, and a zesty lemon cake with silky limoncello buttercream and lemon curd. Clinton's Cakes

"I tend to find cake flavours follow the seasons. Winter is the warming notes of chocolate, butterscotch and coffee; spring is more citrus and elderflower; summer has lighter fresh tones; and autumn is spices, like cinnamon, ginger and nutmeg. In saying that I think the next big trend, which we have started to see a little after 2018's royal wedding is botanicals: think elderflower, hibiscus, rose, lavender and even some herbs like rosemary which can work really well.

"My mum used to be a cake decorator and I remember standing on a stool watching her with a keen eye as she mixed the ingredients together with vibrant colours and flavours, waiting patiently until she gave me the all clear to lick the spoon. Sadly, she passed four years ago and that’s when I put my apron on and decided I would give it a go and I’m so glad I did. Not only have I fallen in love with cake making and decorating, but it brings me closer to my mum and I think that’s why I put in so much love and attention to detail in the cakes I comes from the heart." Sugar Blossom Cakes

"A beautiful cake is nothing without a fabulous tasting sponge and having a different flavour combination per tier means there’s no need to pick just one. We like to mix our flavours to include rich and creamy with zesty and sweet and I’d have to say our key lime and coconut flavour is one of our favourites. A light coconut sponge, which is sandwiched with a tangy lime curd with added zest and softened by a vanilla and coconut buttercream, and for that special day...a big dash of rum. A wonderful combination.
