Marshmallow and multi-fruit smoothie
1 small apple and 1 small banana
1 cup of ice
½ a pear
5 tbsp pineapple juice
Blend ingredients until the consistency is smooth. Serve chilled.
Spicy salmon and kale curry
1 cup of kale leaves, chopped
125g of fresh or tinned salmon
1 small red onion, sliced
2 cloves of garlic
1 tbsp of ginger paste
2 tbsp of tomato purée
2 tbsp black pepper
4 tbsp of fresh milk (1% fat)
½ tbsp of olive oil
Heat a pan and sauté the chopped kale leaves for 2 minutes. Keep it cool and blend into a smooth paste.
Heat the pan again and add the olive oil, onion, ginger paste and chopped garlic cloves. Sauté for 2 minutes.
Add the salmon. If using fresh salmon pieces, cook for 5-8 minutes and if tinned, cook for 2-3 minutes.
Add the blended kale, milk, salt and tomato purée. Cook for 7 minutes.
Add the pepper and cook for a further 2 minutes.
Serve hot with vegetables.
