Wedding planner Belen Esquivel from tells us about the couple's big day which took place in February 2020:
How did they meet?
Jimena and Erick live in New York, they met at a beach party in El Salvador, after that Jimena added Erick on Facebook because she confessed she liked him, he wrote to her and that’s how they started talking and getting to know each other.
Tell us about the proposal:
Erick proposed to Jimena on her birthday in Playa del Carmen, Mexico, in the Mayokoba Hotel. He took her to dinner and when they returned to the room he had prepared a surprise with a sign saying “will you marry me?” along with strawberries and champagne.
How did they choose the place to get married?
Jimena and Erick live in New York but they are both from El Salvador and they wanted to get married here. They chose the venue because of the wonderful chapel and the view of the lake - the coatepeque lake won second place in the contest of the eight wonders of the world.
Did the couple have any special request for their wedding?
They are both a very modern couple, but the most important request was to have an amazing party with amazing food and drinks. We designed themed food stations representing different parts around the world. We had five food stations with foods from five continents and the bar was a very important focal point. We could see this at the wedding when they both partied all night with all their guests.
How did you come up with the concept of this wedding?
Jimena is a bride that likes everything falling perfectly into place but they wanted an industrial modern wedding so we could match the venue. She wanted to have the wedding full of greenery, so to make it more modern and industrial we had the palette as black, white, brown and green. It was an industrial inspiration trying to use materials like wood and metal. Also we had a lounge feeling as we had the young guests in lounge seats and bar stools.
How did this wedding change your career as a wedding planner?
The bride left all the design and concept on my hands, she never saw any trials, they both came four days before the wedding so they had the food tasting that same day after landing. For, me it was a matter of giving them a big surprise in the food and the setup and decor the day of the wedding. Jimena even says she was in shock when she saw everything setup and into place - it was also the biggest surprise for them.
Were there any challenges for this wedding?
The greatest challenge was to design the food stations and choose the types of food. As they did not want a sit down dinner, they wanted stations for people to just pick and hors d’ oeuvres style from all around the world - it is something not common to have in our country, but the Chef of the hotel did a great job.
What was their impression of the wedding?
Jimena and Erick couldn’t believe it was they’re wedding - they were in shock! She said that all she wanted was reflected in every detail and she couldn’t believe it was so perfect! The flowers and greenery with the wood, the lounge setup, the food was a success, all the guests just kept on telling them that it was the best ever - and they loved the bar with the neon lights with their names on it!
What are their favorite memories of the day?
The first dance, Dancing Metallica - Nothing Else Matters, for them was their favorite moment because of the lyrics and the song, that usually is not a first dance song, but means a lot for them as Erick took Jimena as a surprise to a Metallica concert with the symphony in San Francisco and after that the song means a lot to both.
