Are there any emerging trends for wedding catering in 2015?

2015 is seeing a resurgence of elegance and luxury, spoiling guests with elaborate ‘wow factor’ menus. A focus on seasonal and local produce, combined with incorporating personality and heritage into food has also been noted when couples are choosing their wedding menu. 

 

What are some of your most popular dishes in spring/summer?

In spring and summer starters are generally light and fresh. We are finding that Cheshire asparagus is still very popular with us creating dishes such as asparagus tips wrapped in smoked salmon on stunned mange tout with a béarnaise sauce.

Lamb is by far the most regular meat we serve in spring and summer. We use a beautiful cut of lamb which has no bones and very little fat but still has a delicious flavour and texture. It is a very versatile cut and lends itself to being combined with many potato dishes and sauces.

Produce for desserts which combine texture, flavour and colour are in abundance in spring and summer, creating delicious trios is by far the most requested dessert format in these seasons.


And in autumn/winter?

Starters in autumn and winter tend to be more wholesome, with our most sought after starters including rustic tarts and spiced soups.

Rich sauces accompanying game and beautifully aged fillets of beef are popular at this time of year with old classics, such as bangers and mash and steak and ale pie making frequent occurrences often with a modern take.

For desserts we find that old family favourites with a bit of a twist are guaranteed to please your guests on those chilly days.

 

 What is the one piece of advice you would give to couples when choosing their wedding menu?

Use the advice of your professional wedding caterer. Utilise their experience, knowledge and expertise to create your perfect menu. They have the knowhow to make it all come together and to deliver your ideal menu on the day no matter what you chose.
