How to cater for your Norfolk wedding
27 Jan 2020
Roland Schreiber of Norfolk-based Expresso Catering explains how to serve up the best of the region for any wedding throughout the year
What canapés would you suggest for a summer wedding and a winter wedding?
For summer weddings, popular options include smoked salmon blinis, asparagus, Cromer crab cups and duck wraps. At other times of the year, warm up your guests with mini sliders, mini Yorkshire puddings, smoked pork belly confit and Norfolk rarebit.
What dishes are becoming a popular request for weddings?
Increasingly, couples want a meal that is informal and relaxed, with our sharing feasts maintaining as the most popular. It’s a lovely sociable way for guests to eat and mingle together and, by tailor-making the menu, couples can ensure there’s plenty of choice for everyone.
Grazing tables are abundant, unstructured and bursting with amazing flavours, colours, textures and tastes. This style of dining really appeals to style-savvy couples who are looking to add personality and wow their guests - they also make great photo opportunities.
What new additions to your menu are you introducing for 2020?
As well as grazing tables, we are hoping to introduce more street food and vegan choices. We’re also encouraging couples to explore the new tableware options available from our partners at The Banqueting Hire Service.
How can couples make sure their wedding menu stands out from others?
We think a great wedding menu comes down to quality ingredients and great service - the key is that the meal is memorable for all the right reasons. It’s rare for couples to know exactly what they want, so make sure you meet with your caterer to discuss wedding plans, understand your preferences and create a tailor-made menu that works for everyone.
