Beautiful flowers never go out of fashion, and it’s carefully crafted, handmade sugarpaste flowers that are at the heart and soul of Cakes by Moi.

The company is run by Paula Evans, who was spurred to turn her passion into a business after attending specialist classes in sugar modelling, sugar floristry and chocolate as well as an advanced masterclass with Eddie Spence MBE (who made the Queen’s wedding cake as well as Princess Margaret’s and Charles and Diana’s).

Paula has a real talent for sugar flowers, with her creations looking startlingly true to life.

“I love them and when it comes to flowers I can make anything and everything. What’s great is they last forever if they are stored safely and you can have flowers that are out of season at any time of the year.”

So, if you want sweetpeas or English summer roses in your autumn or winter wedding but don’t want to break your budget having them imported, sugarpaste replicas are a real option, bringing a touch of sunshine to your occasion.

Paula’s cake repertoire is wide, with the freshest ingredients (including butter and free-range eggs) being used to bake wedding cakes to order.

Options range from a rich fruit cake to carrot, lemon, coffee and vanilla cakes: “Lemon has been really popular,” Paula divulges.

If you’d like your wedding cake to last beyond the wedding day, or want to stick with tradition and save your top tier for the christening of your first child, Paula recommends fruit cake: “It lasts a very long time,” she said, “My recipe was given to me by Alan Dunn who I’ve done a number of flower courses with, and it’s jam-packed with apricots, figs, dates, cherries and dried pineapple. It’s a fantastic recipe that is packed with fruit. It’s also fed with Armagnac for a few weeks.”

Every part of a Cakes by Moi wedding cake is handmade by Paula, who only undertakes one commission per weekend so she can totally dedicate her time to ensuring everything’s perfect.

“My favourite was a cake I delivered in June with freesias and cream roses – it was absolutely stunning. When you talk about what clients want with them you get a picture in your head, but when you start putting it all together and see the final result, that’s the cherry on the cake.”
