Owner of Buns of Fun Bakery, Emma Thorburn, tells us more about the business based in Sheringham.

When and why did you set it up?

I set up Buns of Fun in 2010 with a one-year-old on my hip, making birthday cakes and cupcakes for local gourmet food markets. Coming from a corporate background I couldn’t see myself back behind a desk earning to pay for childcare. Working from home, I set my hours to my children and home life. I have been known to be baking in my dedicated kitchen at 4am.

What do you love most about your job?

Since switching almost solely into weddings and large celebrations, I have been able to enjoy getting to know each client set as they come through and infusing a bit of their personality into each wedding cake.

I love colour, form, texture and being creative. My background before the office world was in art and design, so I have found my happy medium in buttercream. I have extended this into my canvas and easel drawings, which I do on site on the day. I doodle the cake – adding flavours, names, date and venue, and it acts as a flavour guide and a keepsake long after the crumbs are gone.

What do you love most about the weddings industry?

I love the ever-changing scape of colours; the way trends shift and morph into these ever more beautiful, thoughtful and creative days. Micro pockets of happiness and delight. I can’t put into words, I get as caught up in the weddings as the brides – after all, we deliver the next best dressed thing.

What is the most memorable wedding you’ve worked on to date?

I can’t distil my most memorable wedding into one as there so many highlights from so many weddings. Writing ‘music’ on rice paper waves is one (the groom was a guitarist). I love being offered free rein to allow some autonomy/personal creativity to shine through.

Also, the society/celebrity weddings are always absolutely fantastical but come with non-disclosure agreements (NDAs). There were a couple in the last two years that I’d love to share the details of in terms of designs (super tall and table-scaped), but I can’t share any real nitty gritty.

What trends do you predict will take hold for 2023?

I think more folks are pushing the boundaries and having cuboid cakes. I’ve said for years the square would come back; now I have a few rectangular types in dramatic dark colours and textures this year. I’ve already sent out a marbled cuboid earlier this year (featured on my Instagram). Also, apertures; I first did one several years back and I’ve seen a few recently, so they are starting to trend again.

What is your best piece of wedding planning advice?

Start booking early and create dialogue with your baker as soon as you can; you can always finalise details nearer to the date. We take a booking fee to ‘save the date’ then meet several months before W-Day to nail the design, look at numbers/sizes and adjust any flavour/dietary changes.
